Prices quoted at the time

When you pay a deposit for a holiday in advance is it normal practice to pay the price quoted at the time or to pay the increased cost if the holiday goes up?

Just to update - I have been told that I am now paying for this year's costs. That strikes me as outragous. That means I am paying for a holiday at the time of booking that I have no real idea of what it is going to cost. Ridiculous. I'm not happy.
